Cardhu Distillery

Schotland

📍 Knockando, Speyside, Scotland
Cardhu is Johnnie Walker's "home distillery" and one of Speyside's most beloved names. Its elegant, honeyed whisky forms the heart of many of Diageo's blends, but also shines as a single malt.

🕰️ History and Legacy
Founded in 1824 by John and Helen Cumming—with Helen being one of the first female distillers in Scotland. The distillery was acquired by John Walker & Sons in 1893 and became crucial to Johnnie Walker blends.

⚗️ Production and Philosophy
Cardhu uses long fermentation and unpeated barley, resulting in a smooth, fruity spirit. Maturation takes place primarily in bourbon casks, with occasional sherry finishes.

🍯 Flavor Profile and Style
Soft, elegant and honeyed with notes of pear, apple, toffee, vanilla and light spices.

🌟 Special Bottlings or Collaborations
Known for Cardhu 12 YO, Gold Reserve, Amber Rock, and Distillery Exclusive Editions.

💎 Why this distillery is special
Cardhu represents the feminine, refined side of Speyside — delicate, round and irresistibly gentle.

🧾 Summary

Cardhu – Speyside, Scotland
Soft, fruity Speyside malt; honeyed, elegant and balanced.

🥃 Caperdonich Distillery (closed)
🌍 Region and Location
📍 Rothes, Speyside, Scotland
Caperdonich was once a “twin distillery” of Glen Grant, built to support the growing demand for Speyside whisky — and today a legend among closed distilleries.

🕰️ History and Legacy
Founded in 1897 as Glen Grant No. 2, it closed in 1902 after the whisky crisis. It reopened in 1965 and was renamed Caperdonich. The distillery finally closed in 2002 and was demolished in 2010—although the copper stills were reused at The Belgian Owl Distillery.

⚗️ Production and Philosophy
Caperdonich produced a soft, floral Speyside style with subtle fruitiness and malt notes. The distillate was highly prized in blends, but independent bottlings reveal remarkable depth.

🍯 Flavor Profile and Style
Soft and aromatic with notes of peach, honey, vanilla, almond, and light spices. Older bottlings often reveal tropical fruit and creamy textures.

🌟 Special Bottlings or Collaborations
Known from Gordon & MacPhail, Signatory Vintage, and Caperdonich Peated 18 & 21 YO (before closing).

💎 Why this distillery is special
A rare, closed Speyside distillery whose whiskies are among the most sought-after collectors' items today.

🧾 Summary

Caperdonich – Speyside, Scotland (closed)
Elegant and floral; rare Speyside with soft, fruity complexity.

🥃 Caol Ila Distillery
🌍 Region and Location
📍 Port Askaig, Islay, Scotland
Caol Ila is Islay's quiet force—a distillery producing refined, smoky whiskies with a surprisingly fresh elegance.

🕰️ History and Legacy
Founded in 1846 by Hector Henderson, Caol Ila has endured through several closures and reopenings, remaining a consistent supplier of peat-driven whiskies for blends like Johnnie Walker and Black Bottle. Today, it's one of Diageo's most beloved single malts.

⚗️ Production and Philosophy
The distillery uses heavily peated barley from Port Ellen and distills in tall, narrow stills, resulting in a lighter, aromatic smoky style. Maturation occurs primarily in bourbon casks, with occasional wine or sherry finishes.

🍯 Flavor Profile and Style
Smoky and fresh with notes of sea salt, smoke, lemon, olive, vanilla and light spices.

🌟 Special Bottlings or Collaborations
Known from Caol Ila 12 YO, Distillers Edition, Moch, Cask Strength, and Special Releases.

💎 Why this distillery is special
Caol Ila is the most elegant of Islay — powerful yet refined, with a smoke that's more coastal mist than campfire.

🧾 Summary

Caol Ila – Islay, Scotland
Refined Islay single malt; salty, smoky and clear in character.
