South Star Spirits is an independent bottler founded by Iain Croucher, the visionary behind North Star Spirits. With South Star, he focuses on accessible, transparent, and high-quality expressions from Scotland's leading whisky regions.
🕰️ History & Philosophy
Founded in 2021 as a sister brand to North Star Spirits, South Star was born from a desire to create whiskies that captured the essence of Scotland's diverse regions — without pretense, but with quality at its core.
The philosophy is clear: “Showcase the regions, respect the spirit.” Each release reflects the terroir of its origin, whether that be the peat of Islay or the honeyed notes of Speyside.
⚗️ Selection & Production
South Star works with carefully selected casks from well-known distilleries, but rarely mentions names to let the whisky itself do the talking.
All bottlings are non-chill filtered and natural colour, usually bottled at around 48–50% ABV for optimal balance between strength and drinkability.
