Schotland
📍 Cupar, Fife, Lowlands, Scotland
Daftmill is a rare single farm estate distillery where everything—from barley cultivation to distillation and maturation—is done on a single family estate. It's one of Scotland's most artisanal and exclusive whisky producers.
🕰️ History and Legacy
Founded in 2005 by brothers Francis and Ian Cuthbert, but only first bottled in 2018, Daftmill doesn't produce year-round: they only distill during the quieter agricultural seasons (summer and winter), making production extremely small and coveted.
Daftmill is completely independent, family-friendly and true to traditional Lowland style.
⚗️ Production and Philosophy
Own barley — 100% from the farm itself
Slow, traditional distillation for maximum finesse
Very low production and exclusively artisanal batches
Maturation mainly in ex-bourbon barrels
No dye, no chill filtration
All this results in an extremely pure spirit that lets the Fife terroir speak for itself.
🍯 Flavor Profile and Style
Light, elegant and refined:
fresh citrus
green apple and pear
honey, vanilla and soft grain notes
light herbal and grassy floral accents
The perfect Lowland expression: pure, clean, complex.
