Nose

Light, warm smoke of beechwood, with lemon peel, red berries and a hint of leather and anise.

Palate

Full and round. Yellow plum, pear and golden raisins, followed by candied ginger, caramelized nuts and a soft smokiness in the background.

Finish

Long, with fresh citrus, green apple, a saline edge and a wisp of smoke that slowly fades.

Bøg is Danish for beech, and that is what this whisky is all about. Where Scottish distilleries smoke their malt over peat, Thy uses beechwood, a traditional Danish method of smoking that gives the whisky a soft, warm smokiness.

The barley is organically grown on the farm in Thy and also malted and smoked there. After one distillation in a small pot still, the whisky matured in a combination of Oloroso, Palo Cortado, and PX sherry casks. Bottled at 50%.

The result is a full-bodied single malt in which smoke comes together with dried fruit and sweet sherry notes. A great choice for those who like smoke, but are not looking for the medicinal side of Islay.
